A trade in and some cheap-o (but yummy) lasagna.

So far this has been a pretty good weekend. Friday night I made some Lasagna even though I didn't have a recipe or all of the ingredients. Somehow, it turned out really yummy and I was pretty proud of myself for throwing it together. We are low on money right now so I've been doing things as cheaply as possible.
Yesterday we traded my car in for a used scion xb because I really wanted one and didn't think my car was going to hold up on us for too much longer. I love all of the extra room inside. There are a few things that the dealership is going to fix on it but other than that I love my car.

Here is the recipe for my cheap-o lasagna:

Emily's Cheap-o Lasagna

1 lb cheap ground turkey
1 can/jar of spaghetti sauce
1 can of cream of mushroom soup
1/2-1 cup of frozen seasoning blend (frozen mix of chopped onions, peppers, etc)
2 TS minced garlic
2 TBS brown sugar
2 cups of shredded cheese (I used pizza blend)
8 precooked lasagna noodle (the kind that are ready to go and you don't have to boil)

Preheat oven to 350 degrees. Brown ground turkey w/frozen seasoning blend and garlic; drain. Add 1 can of cream of mushroom soup and brown sugar to meat. Pour a little sauce at the bottom of an 8x8 casserole dish and pour most of the rest into the meat (save about 1/2 a cup or so for later). Heat on med/low for a few mins (stirring occassionally). Now back to the casserole dish...place 2 lasagna noodles on top of the sauce then spread the meat sauce on top (you can add a little cheese to your layers if you've got enough) and then top with 2 more lasagna noodles and spread meat on top of those....layer like that until you get to the last 2 noodles on top. On top of the last 2 noodles pour the remaining spaghetti sauce on top and top w/your cheese. Then cover it and put it in the oven for 50 minutes. Uncover and bake for about 5 more minutes. I was surprised how well it turned out b/c I was really not expecting it to be so good.
